“Tajine” is a word with double meaning. It designates both the utensil composed of a hollow and round dish surmounted by a conical lid, and the culinary preparation that this utensil makes it possible to prepare. “Tajine” comes from the Arabic “tajin”, a term that comes from the ancient Greek “tagenon” meaning “frying pan”.
THE MAIN COURSE
This is one of the premiere sweet and savoury Moroccan dish because I find that the various flavours of this tajine beautifully balance each other. The sweet caramelized prunes work perfectly with the deep and richly spiced meat and onion sauce..
